Cherry Tomato Pico de Gallo

Pico de Gallo is an authentic Mexican salsa also known as Salsa Fresca or Salsa Cruda. Pico can be used just like any other Mexican salsa, as a dip for tortilla chips or perfect in a Taco.

To make Pico de Gallo, all the ingredients are very finely chopped by hand, mixed together and served raw.

To make this Pico de Gallo I’ve used nice ripe, sweet and tangy cherry tomatoes. Which makes the perfect accompaniment to my Charred Chicken Street Tacos.

Ingredients

  • 2 Cups 2 Ripe Cherry Tomatoes

  • 1 Small 1 Red Onion

  • 5 5 Jalapeño or Serrano Peppers

  • 1 1 Lime (juice)

  • 1/2 Cup 1/2 Coriander/Cilantro

  • 1/2 tsp 1/2 Flaky Sea Salt

Directions

  • Remove the seeds and pith from the chilli peppers.
    Separate the leaves and stalks of the coriander/cilantro.
  • By hand, chop all the ingredients very finely.
  • Mix together in a bowl along with the salt and lime juice.
  • Serve with tortilla chips or throw it in your Tacos.
